Sable Chocolat
Sable Chocolat. In the bowl of stand mixer, on a low speed, beat butter until smooth. Important not to overbeat to avoid incorporating too much air!

Add both sugars and beat on low speed until well combined.
In a large bowl, beat butter and sugar with an electric mixer until fluffy.
Sometimes a spatula or spoon is helpful to smooth out any butter lumps. The word sable (SAH-blay) actually means sand. Add the vanilla and egg, beat until creamy.
