Sables. Add the flour and mix on low speed until the mixture just comes together, scraping the bottom and sides of the bowl as needed. The French word sablé means "sandy", which is the French term that takes the place of the English "breadcrumbs".

On a very lightly floured surface.
Continue on low speed and add the flour a little at a time.
Add egg yolk and vanilla and beat thoroughly. Sables can be flavored with almonds, lemon, or orange zest. Gently smooth the surface with a rolling pin, and refrigerate until cold.
