Sauce Mafe. Add in carrots or any other root vegetables you want. Since I followed the full recipe for the sauce but used less than half the quantity of other ingredients, I had plenty of leftover sauce, which I froze and defrosted a few days ago to braise a pair of lamb shanks.
Cook rice while waiting for sauce to cook. It originated in Mali and spread across the region, particularly in Senegal and the Gambia, during the colonial period, when efforts were undertaken to increase production of groundnuts. The leftover solid chunks of salt can be re-used with a new batch of fish.

Mafe Directions: Bring a large pot or pan to a medium high heat and add the oil to cover.
I used it as a sauce for my summer zucchini patties. Return chicken to pan, spooning sauce over the top. Add the meat and continue to cook, stirring occasionally, until it is lightly browned on all.
